The Red Tour covers the postcard Cappadocia — Goreme, the fairy chimneys and the valleys, with short drives. The Green Tour goes further south-west for the underground city and a canyon walk. With one day, take the Red Tour.
How many days do you need in Cappadocia?
Two nights is the sensible minimum: two full days on the ground, and a second morning in case the balloons cannot fly on the first. One night works but leaves no margin for weather.

Yes, but it is a long day — Pamukkale is roughly 200 km inland, so expect an early start and a late return. Worth doing if you have the day to give it; better as an overnight if you do not.
Ephesus: what to see and how long it takes
The main route through Ephesus takes two to three hours, walked downhill from one gate to the other. Adding the House of the Virgin Mary, the Temple of Artemis or Sirince turns it into a full day.
